Thai Style Chicken Stir Fry with Broccoli – Easy and Delicious Meal

 

I love stir-fries.

I love cooking them because when you have all ingredients ready, they only take minutes to finish. It means you can freshly prepare the dish for your guests.

And they will not even notice you are not with them at the table!

And I love eating them, as quick stir-frying of vegetables keeps them crunchy and appealing since their colours stay vivid and bright. Plus, also, you don’t lose too many nutrients during cooking.

This Chicken Stir Fry with Broccoli, like all the other ones, can be served with rice. But I have recently started to use rice noodles more often.

They require very short cooking, while some types don’t even have to be cooked but only soaked in boiling water. And you have a similar experience as with wheat pasta.

This is excellent information for people who either cannot eat wheat products or – like me – try to keep their love for pasta under control 😉

Chicken Stir Fry with Broccoli and Snow Peas

Ingredients
 
 

  • 500 g chicken breasts
  • 1 tbsp lime juice
  • 1 tbsp olive oil
  • 1 tsp honey
  • 0.25 tsp chilli flakes
  • 1 broccoli
  • 250 g snow peas
  • 2 cloves garlic
  • 1 tbsp grated ginger
  • 3 tbsp lime juice
  • 5 tbsp sweet chilli sauce
  • 0.5 tbsp honey
  • 200 g rice noodles
  • 1.5 tbsp olive oil
  • salt and pepper

Instructions
 

  • Cut the chicken breasts into long strips.
  • In a bowl, mix the marinade ingredients: 1 tbsp olive oil, 1 tbsp lime juice, 1 tsp honey, chilli flakes and a bit of salt and pepper; put the chicken to the marinade and mix well to cover. Leave to marinate for at least 1 hour.
  • Cut broccoli into small florets (the rest could be used in a vegetable soup), cut endings of snow peas and if possible, remove strings.
  • Mix the lime juice and the sweet chilli sauce.
  • Heat 0.5 tbsp of olive oil in a wok, add marinated chicken and stir-fry till it is golden, place on a plate and keep in a warm place. To make sure the chicken is nice and crispy, divide it and fry it in two batches.
  • Cook the rice noodles per the packet instruction.
  • Heat the rest of the olive oil; add the garlic and ginger fry till they release their aroma.
  • Add broccoli, stir fry for 3 minutes, add the snow peas, stir fry for another 2 minutes.
  • Add the chicken and the mixed lime juice and chilli sauce, stir, add the cooked rice noodles and give it another stir.
