Iceland – a Bit of History

 

I have always been a proponent of delicious, healthy food. So when @IcelandFoods asked me to participate in their Exotic Meats promotion, I agreed straight away.

The beginnings of Iceland go back to the seventies when fridges and freezers weren’t available in all households. Their first stores specialised in selling loose frozen products. But times changed, and so did Iceland.

Today you can buy here not only a whole range of frozen products and ready meals, but also many different ingredients required to prepare delicious and healthy food.

Also, they sell household essentials, making shopping there so much more convenient. And if you don’t have the time or prefer not to carry your heavy shopping bags, you can order everything online anyway and have it delivered right to your door.

Iceland takes the quality of their foods seriously. They were the first UK supermarket that eliminated artificial colourings, flavourings, unnecessary preservatives, as well as banned monosodium glutamate from their home branded products.

 

#PowerofFrozen – The Importance and Benefits of Frozen Food

However, Iceland has still stayed true to its roots. That is why they continually expand their frozen products choice. The Exotic Meats range includes some unusual types of meat, which very few of us have tried and probably even fewer have cooked.

But we can easily change that now and prepare venison, buffalo, and even ostrich in our own kitchens thanks to their range. All of the meats are an excellent source of lean, high-quality proteins.

But I decided to test and prepare the leanest meat from the range (containing only 1% fat) – Belgian Blue Beef Rump Steaks.

The food freezing process allows us to have a greater choice of frozen exotic food. We wouldn’t have been able to try it fresh in the past, as the food would have gone off long before it reached our shops.

Frozen meat is also very convenient as it saves us time when we purchase it ahead. You can simply buy a larger quantity without worrying that it will go off before you cook it. You can keep it in your freezer for several hours before it is needed and then let it thaw in a fridge.

Freezing the meats not only ensures that the food lasts longer, but also, most importantly, maintains its quality of taste, as well as its nutrients. And this is the real #PowerofFrozen.

 

Healthy Beef Stir Fry – How to Use Frozen Meat to Make Delicious and Quick Family Dinner?

 

Before you start cooking with frozen meat, you should at first defrost it thoroughly. For best results, you should also allow it to rest at room temperature for an extra 10 minutes before cooking.

And what can you prepare with frozen meat? There are plenty of meals you can make with it. But I recommend my Healthy Beef Stir Fry with Rice Noodles and Peppers.

Stir-fries are a great way to quickly prepare delicious and healthy meals. When you have all the components prepared and waiting for use, you will make it in minutes.

The thinly sliced beef cooks fast which is a great advantage when you are short of time. Adding the vegetables ensures this Healthy Beef Stir Fry is full of colours and packed with nutrients complementing the lean proteins.

Healthy Beef Stir Fry with Rice Noodles and Peppers

Ingredients
  

  • 2 packs 2 Extra Lean Belgian Blue Beef Rump Steaks (400g in total)
  • 1 pack Farmer's Market Mixed Peppers (you will need all 3 peppers)
  • 1 pack Iceland Spring Onions (125g)
  • 6 cm piece ginger
  • 5 cloves garlic
  • 1 pack Farmer's Market Mixed Chilli's 65g (you will need 1 -2 chilli peppers depending on how spicy you would like your stir fry to be)
  • 6 tbsp light soya sauce
  • 2 tsp sugar
  • 300 g rice noodles
  • 3 tbsp wok oil
  • 1 pack Farmer's Market Limes (you will need 1 lime only)
  • 2 handfuls coriander leaves (torn or roughly chopped)

Instructions
 

  • Defrost the beef thoroughly. For best results, allow it to rest at room temperature for extra 10 minutes before cooking.
  • Cut the rump steak into thin slices (2-3mm).
  • Cut the peppers into thin stripes.
  • Chop the spring onions, keep the white and green parts separately.
  • Grate the ginger (you should have approx. 4 tsp) and thinly chop the garlic.
  • Thinly chop the chilli pepper.
  • In a small bowl mix the soy sauce and sugar.
  • Put the rice noodles in a big pot and pour in boiling water to cover them completely. Cover with a lid for 3-4 minutes; drain.
  • In a wok (or a big frying pan) heat up the oil, add the grated ginger and garlic, stir and fry for 10-15 seconds.
  • Add the white parts of the spring onions and fry for 1 minute, then add the peppers and stir-fry for 1 minute longer. Finally, add the beef, stir fry everything for approx. 2-3 minutes till the meat changes colour to brown.
  • Add the rice noodles, chilli, green parts of spring onions and soy sauce with sugar, stir everything well.
  • Divide into 4 bowls, serve with coriander and quarters of lime.*

Notes

* Both coriander and lime juice add the great, fresh taste to this stir fry so you shouldn't omit them.
