Coffee Almond Cake – a Delicious Dessert

It has the combination of deliciously sweet almonds with the slightly bitter coffee that pairs into a mixture even children will love! Coffee Almond Cake
Ingredients
Cake:
- 100 grams butter or margarine
- 100 grams caster sugar
- 2 eggs lightly beaten
- 100 grams self-raising flour
- 0,5 teaspoon baking powder
- 50 grams ground almonds
- 1 tablespoon instant coffee dissolved in 1 tbsp of hot water
Filling/Frosting and Decoration:
- 100 grams butter
- 25 grams icing sugar sifted
- 1 tablespoon instant coffee dissolved in 1 tbsp of hot water
- Coffee powder for sprinkling
- Coffee beans to place on the sides of the cake
Instructions
- Preheat the oven to 325 degrees Fahrenheit (165 Celsius degrees). Base and line two seven-inch (18cm) sandwich tins.
- Cream the butter/margarine with the sugar until it's light and fluffy. Beat in the eggs one at a time, mixing everything as you go.
- Fold in the flour, baking powder, almonds, and the coffee. Divide the mixture between both the tins.
- Bake in the oven for half an hour, or until the cake has risen well and feels firm when touched. Take it out of the oven and allow it to cool on the wire rack.
- Cream the butter and sugar for the filling until it's light and fluffy. Stir in the coffee and use one-third of this mixture to sandwich the two caked together.
- With the remainder of the spread, pipe medium dots on the borders on top of the cake. Sprinkle coffee powder on top of the cake and add the coffee beans on the side. Serve and enjoy!
