Are you looking for an easy to make but impressive and delicious fish dish? Then you are in the right place. In a total of one hour (including all the preparation), you will have Cod Poached in Milk with Green Pea Puree and Carrots – a meal that looks (and tastes) like from a great restaurant. To prepare it, you will need a fresh, plump fillet of cod but the rest of the ingredients are pretty basic. You most probably already have them in your fridge, freezer and pantry. But it is the way that they are prepared that adds the wow factor to the cod recipes.

 

Cod Poached in Milk with Green Pea Puree and Carrots – a Quick Fish Dish with a Twist

I have always been a big fan of green peas and could add them to almost every meal. (I yet have to check if I can make a dessert or cake with them). So, even when I was a child, I didn’t have any problems with eating the immortal (at least in Poland) duo of carrots and green peas.

But I know some adults tortured with it so much in their childhood that they wouldn’t even think about having it now. The good news is that they may change their mind when they see a completely different version of the combination.

For this cod recipes, I cooked the green peas in milk, next I pureed it and seasoned it not only with salt and pepper but also with vanilla. But the carrots are prepared in a completely different form.

I used a vegetable peeler to slice them into long ribbons. Then I quickly fried them with butter and a bit of honey. But I still wanted to add a lot of crispiness to the smooth pea puree and crunchy carrot ribbons. So I decided to roast not big chunks of potatoes but thin slices and make them almost like chips (crisps).

And last but not least – the cod poached in milk. I placed the fillets in a shallow pan with herbs and seasoned milk. I boiled everything and then just left it for 8 minutes (without further cooking). That way the cod was beautifully moist and infused with the herbal aroma.

The whole fish dish tasted delicious. It also looks so good. It will be difficult for your guests to believe that to make it you used instructions from ‘cod recipes easy’ folder.

This fish dish takes about an hour in total to prepare but it looks and tastes like it was cooked in a great restaurant.

Ingredients
  

  • 1 tbsp oil
  • 4 potatoes peeled and cut into 0.5cm slices
  • 400 g green peas
  • 1.5 l milk
  • 2 x 150g fillet of cod
  • 2 handfuls fresh herbs (parsley (parsley, thyme, sage)
  • 40 g butter
  • 0.5 tsp vanilla extract
  • 1 big carrot sliced into long ribbons with a vegetable peeler
  • 0.5 tsp honey
  • salt and pepper.

Instructions
 

  • Preheat an oven to 220C (200C fan ovens) and place there a big baking tray greased with the oil.
  • When the oven and the oil are hot, take the tray out and in a single layer put the potato slices, season them, stir to cover in oil and set back into the oven for 20-25 minutes (till golden-brown and crispy).
  • Cook the green peas in 500ml of milk for 8 minutes (after the milk boils, decrease the temperature to make sure it doesn’t spill).
  • Place the fillet of cod in a big pan, pour 1l of milk (it has to completely cover the fish), add the herbs and season with pepper and 0.5 tsp salt; boil.
  • After it boils, take the pan off the stove and keep the fish in the milk for 8 minutes.
  • After the green peas are cooked, remove 250ml of milk. In a food processor puree the rest with 20g of butter, vanilla extract and seasoning. If the puree is too thick, add more milk.
  • Melt the rest of the butter in a frying pan, add the carrot ribbons and fry them briefly, season and add the honey.
  • Serve the soaked fish on top of the green peas puree with the carrot ribbons on top and the potato slices next to the fish.
