Coconut Bounty Balls – Homemade and Healthier Treats
When years ago already very popular in western world chocolate bars finally reached Poland, I couldn’t decide which one was my favourite.
Was it nutty Snickers or maybe coconutty Bounty? Soft and chewy Mars or maybe Twix with a crunch of a biscuit hidden inside? So, I tried them, enjoyed them and… still, couldn’t make up my mind.
Many years have passed by and I became more aware of what was good for me and not just what tasted good. I, of course, still do eat sweets, I am not going to deny it. But in general these days I prefer a piece (sometimes even a big piece) of real chocolate to these bars that are delicious but containing not the healthiest ingredients. Which of course doesn’t mean I don’t crave them! Therefore, the only solution was to make such treats myself. This way I would know what exactly was inside them. Additionally, I could also control the amount of added sugar.
When it came to deciding which one to make, the answer was easy: Bounty. Firstly, I didn’t need a huge number of ingredients. Secondly, it seemed the easiest to produce. Thirdly, it was going to be; I daresay, a sweet treat healthier than many others. And all these benefits were due to desiccated coconut, the main ingredient. Did you know for example that coconut is a good source of fibre and manganese? We all probably are aware of the importance of fiber in our diet (if you don’t remember, please read this post). And the manganese is significant for daily skin health, blood sugar control as well as protection against free radical damage.
As I foresaw, preparing homemade Coconut Bounty Balls was easy. It was just a question of mixing all the ingredients, forming the desired shapes by pressing everything together and then, after refrigeration, covering them in chocolate. Additionally, making Coconut Bounty Balls is a terrific way of utilising desiccated coconut used for producing Homemade Coconut Milk.
Coconut Bounty Balls
Ingredients
- 30 g coconut oil
- 150 g desiccated coconut *
- 2 tbsp liquid honey
- 1 tbsp coconut liquor
- 150 g chocolate
Instructions
- Melt the coconut oil and mix it very well with the desiccated coconut, honey and liquor.
- Take a portion of the mixture and form it into a desired shape** by pressing together.
- Refrigerate for at least 1 hour.
- Melt the chocolate in the microwave or over a pan of simmering water, cool down.
- Cover the coconut eggs with chocolate and refrigerate again until the chocolate hardens.
