How My Passion for Cooking Directed Me to Cheesy Cauliflower Soup
How many times have I written on my blog about my passion for cooking (and eating)? – Many, I am sure.
I obviously (just like everybody else) have days when I would prefer to be served food rather than prepare it myself. But after each break from cooking, I look forward to getting back to my kitchen.
And then, it doesn’t matter if I am going to make a well know and many-times tested meal, experiment with new ingredients or recreate a dish I ate somewhere. I just love it and can’t imagine my life without it.
My passion for cooking extends to reading recipes, too.
When I read, I try to imagine the taste of the food prepared as per the instructions. And if I like it, sooner or later I will test it out.
This passion makes me buy more cookery books (even though I already have so many of them). It also makes me search for more amazing food blogs and recipes on the internet.
As well as look for recipes everywhere: in all sorts of magazines or even supermarkets’ promotional material.
Cauliflower Soup with Pear and Gorgonzola – Delicious Combination of Flavours
The below recipe for Cauliflower Soup with Pear and Gorgonzola I found in a Waitrose booklet. Straight away I liked “the image of the taste” in my mind.
And soon I was proven right. When I cooked the slightly changed version of the cheesy cauliflower soup for the first time, I did enjoy it a lot.
Please don’t worry that the mild taste of the cauliflower will not make this soup sufficiently attractive. The addition of pears and, especially, Gorgonzola cheese, sharpens the flavour of the soup and brings it to a higher level.
And it is not only my opinion.
When I tested this Cauliflower Soup on one of my friends, she liked it so much that she took the leftovers back home with her.

Cauliflower Soup with Pear and Gorgonzola
Ingredients
- 20 g butter
- 200 g shallots peeled and chopped,
- 1 stick celery chopped,
- 2 Conference pears peeled, cored and chopped,
- 1 cauliflower (weighing approx. 500 g), broken into florets
- 1 l vegetable stock
- 60 g Gorgonzola cheese (dolce), roughly chopped
- 3 tbsp parsley chopped
- salt and pepper.
To garnish:
- walnuts chopped
- parsley chopped
- Gorgonzola cheese chopped
Instructions
- In a big pot melt the butter; add the shallots and celery and cook over medium heat for 5 min.
- Add the pears and cauliflower, stir and pour in the stock; cook for approx. 15 minutes till the cauliflower is soft.
- Add the Gorgonzola and parsley, cook for 5 minutes longer.
- Blend the soup till smooth, adjust the seasoning and serve garnished with chopped walnuts, parsley and Gorgonzola.
