Beetroot Information
Beetroot is a vegetable that is popular in Central and Eastern Europe. While there it is frequently eaten in a soup called borscht, it can be used in a variety of ways. To keep it simple, you can also eat them raw. While prepared beets tend to be sweeter, raw beetroot is still a tasty addition to any meal.
Beets are very good for you. Some experts even go so far as to label it a superfood. It is a great source of fibre, potassium, folic acid, and manganese. The greens of a beet are rich in vitamins A and C, iron, and calcium. Beetroot is particularly healthy for the liver, as it is good for detoxification due to the beta cyanin found in beets. It also helps your heart, as drinking beet juice can notably decrease blood pressure for over a day. Beets also increase your muscle power, so if you are a gym bunny, this is definitely the vegetable for you. To top it off, they tend to be cheap, so you won’t break the bank while eating them.
How to Prepare Raw Beetroot
To prepare raw beets, people usually grate them or thinly slice them. They are delicious when served in a salad, as they add texture and crunch. Raw beetroot can also be used to make a healthy smoothie, or even by itself as raw beet juice. As a bonus, it has more vitamin C than prepared beets.
Sadly, raw beets don’t freeze very well – so if you plan on freezing beetroot, cook it in advance.
