Poppyseed Cake With Milk Chocolate Icing

Ingredients
  

Cake:

  • 3 eggs
  • 250 g sugar
  • 2 tsp vanilla extract
  • 250 ml oil
  • 500 ml yoghurt
  • 130 g plain flour
  • 3 tsp baking powder
  • 250 g ground poppyseed

Icing:

  • 100 ml double cream
  • 100 g milk chocolate

Instructions
 

  • Line with parchment paper a 23 cm diameter round baking tin with a removable base, and grease its side.
  • Preheat the oven to 200C (180C fan ovens).
  • Mix the eggs, sugar, vanilla and oil in a food processor or with the help of hand mixer.
  • Add the rest of the ingredients, mix well and transfer into the prepared baking tin.
  • Bake for 60-70 minutes (until a wooden stick inserted into the cake comes out clean).
  • Prepare the icing by gently heating the cream (don't boil it) and add the chocolate broken into pieces. After 2-3 minutes stir it to combine the ingredients.
  • Leave it to thicken.
  • When the cake is cool, spread the icing on its top and sides.
