Delicious and healthy energy bars with amaranth, peanut butter and chocolate.

Ingredients
  

  • 160 g peanut butter
  • 100 g honey
  • 30 g amaranth popping
  • 100 g dark chocolate (60% cocoa)

Instructions
 

  • Cover a bottom and sides of a small baking tray (I used 14 cm x 23 cm) with baking parchment.
  • Put the peanut butter and honey in a pan and warm up on a medium heat until runny (but don’t boil them).
  • Add the amaranth popping and stir well.
  • Transfer it into the prepared tin and smooth with the back of a spatula.
  • Melt the chocolate in the microwave or over a pan of simmering water and pour over the amaranth mixture.
  • Spread it and leave in the fridge for at least 30 minutes.
