Spinach Salad with Strawberries and Asparagus
Delicious and refreshing salad with spinach, strawberries and asparagus.
- 500 g white or green asparagus
- 80 g fresh spinach
- 200 g strawberries sliced,
- 3 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp honey
- salt and pepper.
Boil a pan of salted water.
Remove woody ends from the asparagus, peel, if you are using the white asparagus, and cut the stalks into 3-4 pieces.
Put the asparagus pieces in the boiling salted water and cook for 3 min. Immediately transfer to a bowl with ice cold water, keep there for 2-3 minutes, drain well.
Arrange the spinach, strawberry slices and the asparagus on a serving plate.
Mix the olive oil, the vinegar and the sauce, season and pour over the salad.
