  1. Cover 2 big plates with cling film.
  2. Press the jam through a sieve.
  3. With an electric mixer combine the mascarpone and jam quickly.
  4. Form a walnut size balls using 2 teaspoons (they don’t have to be very smooth) and place them on the prepared plates.
  5. Put the plates with the pralines to the freezer for minimum 2 hours.
  6. Before you take the pralines out from the freezer, melt the chocolate in a microwave or over a pan of simmering water (make sure no water gets to the chocolate).
  7. Take the first plate from the freezer, pick up one praline and cover it in chocolate. Put it on a silicone sheet and immediately decorate with the pieces of lyophilised strawberries. Continue with the rest of pralines (take the second plate out from the freezer only when you are done with the first one).
  8. Keep the pralines in a fridge.
