What is Florentine Biscuit?

I am sure that we all have our favourite type of biscuits. Some of us like peanut butter biscuits, some prefer chocolate chip cookies, others will go for healthier treats.

Although I like all sorts of them, Florentine cookies are on top of that list.

Some of you may ask “What is Florentine?”. Although there are many types of Florentines, generally speaking, these cookies consist of a mixture of nuts, dried fruits and sweet syrup.

The first two components give taste and texture, the latter (made with honey, sugar or condensed milk) – binds the dry ingredients. Often, there is also a layer of chocolate that holds everything together after baking in the oven.

 

Chocolate Florentines – Luxurious in Taste and Size

I discovered Chocolate Florentines biscuits a long time ago. And since then I have spread my adoration among family members and friends.

I am pretty sure once you try them, you will not be able to resist them either.

Obviously, they cannot be easily put into a healthy food category. However, if we really wanted to, we could find health benefits of some ingredients (e.g. dark chocolate is an excellent source of magnesium after all).

But, in truth, we don’t have to as the taste of these Chocolate Florentines speaks for themselves. They are chewy and crunchy at the same time, simply beautiful.

It was my father-in-law who called them “luxurious” as they are not the thin and tiny Florentines you may get with a cup of coffee in some coffee shops.

These are thick and generous, luxurious in taste and size!

They also have another significant advantage: the below Florentines recipe is so easy to make that it could be almost entirely (maybe except for melting the chocolate and cutting) prepared by a few years old children.

Luxurious Chocolate Florentines

Ingredients
  

  • 300 g dark chocolate broken into pieces
  • 3 cups cornflakes crushed
  • 1 cup raisins
  • 0.75 cups roasted unsalted peanuts
  • 100 g red glace cherries
  • 1 cup sweetened condensed milk.

Instructions
 

  • Melt the chocolate in the microwave or over a pan of simmering water.
  • Line a base and sides of a 30 x 40 cm baking tray with parchment paper.
  • Spread the chocolate evenly over the paper, and then put the tray in a fridge till the chocolate sets completely.
  • Preheat an oven to 180 Celsius degrees (160 for a fan oven).
  • In a big bowl combine the rest of the ingredients and mix well.
  • Spread the mixture evenly over the set chocolate base; use back of a tablespoon to press it down.
  • Bake for 15-20 minutes.
  • Take the tray out from the oven, let the Florentines cool down completely (the chocolate base must be set again) and cut into squares.
